Peel, wash and boil yam, when soft add salt and allow for few more minutes and then set aside.

Put vegetable in a pan when hot add onions and stir then tomatoes and pepper, stir and allow for about 4minutes and then stir, add salt Nd seasoning cube and fry for an extra minute,. Break and whisk egg and pour into pan and cover. Allow for about a minute and then stir continuously till evenly fried then turn off heat.
