  • 1 tablespoonoil

    Ingredients:

    In a bowl, whisk together the eggs, sugar, mayonnaise, and salt until well combined. (Tip: Pour the mixture into a measuring cup to make the next steps easier.)

    Heat 1 tablespoon of oil in a skillet over high heat for about 30 seconds. Add a drop of the egg mixture; if it cooks right away, the pan is ready.

    Pour in 1/3 of the egg mixture and quickly spread it across the skillet.

    When the egg is almost set (but not fully cooked), fold both sides in with a spatula as shown in the photo.

    Using the spatula, roll the omelet from the back of the pan toward the front.

    Add half of the remaining egg mixture. Fold in the sides and roll again.

    Add the rest of the egg mixture and repeat step 7.

    Your rolled omelet is done.

    Wrap the omelet in plastic wrap and let it cool. (No need to refrigerate.)

    Once cooled, slice and enjoy!
