Heat the kadai add 1 tsp ghee add chopped cashew and almond fry till light brown then remove in a plate then in a same kadai add ghee when ghee is hot add grated carrot saute for 7-8 min in medium flame

Then cover it for 1/2 hour in low flame keep check in between

Then add milk, sugar, cinnamon powder mix it well cook till halwa soaked the milk in medium flame

When halwa soaked the milk add 1/2 of fried cashew and almond remaining cashews and almond for garnish when serve

Gajar ka halwa is ready to serve garnish with fried almond, cashew and some of chopped green pistachio (optional)

You can increase or decrease sugar as per your taste

You can add roasted mawa (khoya) in the end mix it well before garnish (optional)
