Ingredients

1 Loaf
  1. 1/2 CupVegetable oil
  2. 1 CupGranulated sugar (you can do less)
  3. 2Eggs
  4. 3Overripe bananas mashed
  5. 1 tspvanilla esence
  6. 1/4 Cupgreek yoghurt
  7. 1 1/4 CupAll purpose flour
  8. 1 cupoatmeal
  9. 1/2 tspbaking powder
  10. 1/2 tspbaking soda

    Preheat oven to 180 and prepare pan.

  2. 2

    In a bowl, whisk oil and sugar till well incorporated.

    Add in eggs one by one and mix well.

  4. 4

    Add in mashed bananas, vanilla and greek yoghurt. Whisk well to ensure all is incorporated.

  5. 5

    Add in flour, oatmeal, baking powder and soda into wet ingredients and fold with spatula or wooden spoon.

  6. 6

    Pour batter into prepared pan and sprinkle about 1 1/2 tbsp of oatmeal on the mixture.

    Bake for 50 - 60mins. Enjoy!
