Ingredients

3 servings
  1. Pre-cooked maize and beans
  2. 6potatoes (optional)
  3. 3finely chopped tomatoes
  4. 1large well cut onion
  5. 3grated carrots
  6. Cooking oil
  7. Coconut milk
  8. to tasteSalt

Steps

  1. 1

    Put oil and the already cut onion in a sufuria and let it cook till golden brown

  2. 2

    Add your tomatoes and the carrots and let them cook for 2 mins then add salt to taste

  3. 3

    Add the potatoes and let them cook for 6-7 mins

  4. 4

    Then add your githeri. You can add a little water at this point

  5. 5

    Divide your coconut milk into two, the first half add some water, stir then add to the githeri and keep on stirring until it starts boiling

  6. 6

    Add the other half of the coconut milk and stir until it starts boiling and let it cook for 4 mins

  7. 7

    Serve hot
