Ingredients

  • 2 cupscooked chickpeas (about 330 grams)
  • 3/4 cupfresh lemon juice (about 180 ml)
  • 3/4 cupgood-quality tahini (about 180 grams)
  • 1 cupcold water or 3 ice cubes as needed (about 240 ml)
  • 1 tablespoonlabneh or plain yogurt (whichever you have)
  • Salt to taste
  • For garnish:
  • Roasted eggplant
  • Pomegranate seeds
  • Chopped pistachios

Steps

  1. 1

    Place the warm chickpeas in a food processor. Add the garlic, lemon juice, tahini, and salt. Blend until very smooth.

  2. 2

    Add the hot water and the tablespoon of labneh or yogurt. Blend again until the mixture is creamy.

  3. 3

    To roast the eggplant, slice it into even rounds. Brush both sides with vegetable oil and place on a nonstick baking sheet. Roast in a preheated oven until the eggplant is nicely browned.

  4. 4

    To serve, spread the hummus on a large plate using a spoon. Place the roasted eggplant in the center, garnish with chopped pistachios, and serve. Enjoy!
