Hummus with Tahini

This is a very special dish, served as an appetizer alongside grilled meats or oven-roasted chicken, or as a main dish if you add sautéed ground beef and pine nuts on top. I added a new twist by topping it with roasted eggplant, which gives it a delicious flavor and a unique look.

Cooking Instructions

Place the warm chickpeas in a food processor. Add the garlic, lemon juice, tahini, and salt. Blend until very smooth.

Add the hot water and the tablespoon of labneh or yogurt. Blend again until the mixture is creamy.

To roast the eggplant, slice it into even rounds. Brush both sides with vegetable oil and place on a nonstick baking sheet. Roast in a preheated oven until the eggplant is nicely browned.

To serve, spread the hummus on a large plate using a spoon. Place the roasted eggplant in the center, garnish with chopped pistachios, and serve. Enjoy!
