Ingredients

  1. 1 cupgrated sweet corn kernels
  2. 1/4 cupcrumbled fresh paneer
  3. 2 tbspfinely chopped coriander
  4. 2 tspOil
  5. 1/2 tspsalt
  6. 1 tbspgreen chilies, chopped
  7. 2 tbspsemolina
  8. 1/4 cupbesan
  9. 16 leavesbanana (each of 5” roundels)
  10. 1 tspOil

Steps

  1. 1

    Combine all the ingredients along with 2 tbsp of water in a deep bowl and mix well.

  2. 2

    Apply a little oil on one side of each banana leaf and keep aside.

  3. 3

    Place a banana leaf with the greased side facing upwards, pour 2 tbsp of the batter over it and spread it evenly.

  4. 4

    Place another greased banana leaf with the greased side facing downwards over it and press it lightly.

  5. 5

    Cook on a non-stick griddle till light brown spots appear on both the sides of the leaf and the panki in between peels off the leaf easily.

  6. 6

    Repeat the steps to make more 11 pankis.
    Serve hot with green chutney.
