Healthy and delicious sooji uttapam loads with veggies. So try this recipe on the occassion of Republic Day.
Steps

In a mixing bowl add semolina, yoghurt, salt and baking powder. Whisk with 1 cup of water and make a runny batter. Keep it aside for 20 minutes and semolina will absorb water and swell.

Now wash, clean, grate and chop the veggies. Add tomato, carrot, chaat masala, little bit of salt and combine together.

In other bowl pour chopped coriander, spinach, chaat masala, salt and mix together.

Now preheat a non stick pan and brush some oil. Now pour two laddle of semolina batter and spread it to make uttapam.

Start spreading tomato carrot on the top, spinach coriander on the bottom and spread grated coconut in the middle.

Drizzle some oil on the top and corners. Cover with lid and cook for 15 minutes in low flame.

Now when veggies are perfectly cooked. Transfer the uttapam in serving plate.

Repeat the process and make other uttapams.

Serve hot with green chutney or sauce.
