Peel, wash and cut carrots into thin long slices.

Take a pan and boil the water add turmeric powder and carrot pieces, boil for 5 to 10 minutes till carrot becomes little soft.

Now in a glass jar pour water then add boiled carrot pieces, salt, chilli powder and mustard powder. Mix all the ingredients.

Place the jar in sunlight for 2-3 days

After 2-3 days Gajar ki Kanji would be ready to relish... it's a great drink for winter noons.

Keep it in refrigerator to make the shelf life longer or consume it within 3-4 weeks.
