This is a super simple, but tasty dinner. Customizable for whatever veggies you want to roast along with the kielbasa sausage... this is just our favorite combo. I usually serve this with an extra veggie or a side salad to make it a complete meal.

Ingredients

4 servings
  1. 3large sweet potatoes, peeled and cut into large cubes
  2. 1 tbsp.olive oil
  3. 1/4 tsp.each salt, pepper, smoked paprika, garlic powder
  4. 1/4 tsp.salt free all purpose seasoning
  5. 1 package (12 oz.)keilbasa sausage, sliced thinly
  6. 2 tbsp.your favorite bbq sauce
  7. 2-4 dashesFrank's red hot sauce

Cooking Instructions

    Preheat the oven to 400°F. Line a large baking pan with parchment paper or greased foil. Place the sweet potato cubes in a large bowl and toss them with the oil and seasonings until all pieces are evenly coated and seasoned. Then spread them out evenly onto the prepared pan.

    Bake for 20 minutes, then remove from the oven and flip them all. Mix the red hot into the bbq. Nestle the sausage slices over the top and brush the sausage lightly with the bbq sauce. Place it back in the oven for another 15 minutes, or until the sweet potatoes are tender. Serve immediately with whatever side items you'd like.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
