
InstantPot Ham and Beans
Brining the beans creates tender skins and a wonderful creamy texture.
I use my InstantPot cooker (as a slow cooker) to make this a one pot dish from brining to serving.

Brining the beans creates tender skins and a wonderful creamy texture.
I use my InstantPot cooker (as a slow cooker) to make this a one pot dish from brining to serving.
Steps

Brine the beans for 8 to 10 hours.
(In the inner pot, dissolve Kosher Salt in 2 quarts of Water; add Beans and let stand) - 2
Drain and rinse beans (leave in colander). Rinse and dry the inner pot.

In the InstantPot, use the saute setting to cook the Onion and Celery in Olive Oil until tender (3 - 4 min)

Add Beans, Garlic, and Ham bone (not the cubed Ham) and cook on medium until Beans are tender (4 to 6 hours). Note: Cook on low if you want to cook it all day while you are at work.

Remove the bone (make sure to remove the ham with it. It will be no good to eat now) and discard. Add the cubed Ham and continue to cook on low for another 30 minutes. (This is a good time to whip up some cornbread :)

Season with salt and pepper to taste.
