Wash veggies and diced them.

Crack the eggs in a bowl,add a pinch of salt and beat until it turns pale yellow.

Heat your pan on medium heat and add oil. Once hot throw in your onions and let it cook for 1mins.

Add your tomatoes, pepper, and seasoning after some minutes you add your green pepper.

Pour the egg into the pan and let it cook for a minute or until bottom starts to set.

Sprinkle your spring onions on top.

Serve with fried plantains
