One of my favorite dishes! I love spinach, and this is definitely my favorite way to prepare it. The spicy touch from the smoked paprika along with the cumin... Delicious!

First, chop the spinach (if using frozen, add directly) and boil it.

While the spinach is boiling, slice the garlic and cut the bread slices into 4-6 pieces each. In a large skillet, sauté the garlic in a generous amount of extra virgin olive oil. When the garlic is halfway cooked, add the bread pieces, making sure both sides soak up the garlic oil, and fry until golden. Transfer the fried bread and garlic to a bowl or blender and set aside.

Drain the spinach, reserving 1 cup (about 240 ml) of the cooking water. Set the spinach aside.

Add a splash of the reserved spinach water, a splash of vinegar (to taste), and a pinch of salt to the fried bread and garlic. Blend until you get a creamy texture, adding more water and vinegar as needed until it’s creamy but not too runny.

Rinse the chickpeas thoroughly until the foam disappears and remove any loose skins. Set aside.

In the same skillet used for frying the bread, add 2 tablespoons extra virgin olive oil and 1 tablespoon smoked paprika. Sauté briefly, making sure not to burn the paprika.

Immediately add the spinach and sauté so it absorbs the paprika. Then add the chickpeas, the bread-garlic cream, and ground cumin (to taste). Mix well and cook for a couple of minutes.
