Use whatever veggies you have in the fridge or your favorites. You need about 2 cups of veggies.

Preheat oven to 375 F.

Heat a medium skillet (Oven safe) over medium/low heat with olive oil and minced garlic.

Add veggies to skillet and sauté for 8-10 minutes season with salt and pepper.

If using bacon or ham, cook in a small skillet and add to medium skillet.

While veggies/bacon is cooking, in a medium bowl whisk eggs and almond milk. Then add Parmesan.

When veggies are done, pour egg mixture over veggies. Or use a cupcake pan and add a spoonful of veggies and egg mixture to each cupcake. Mixture made 12 cupcakes frittatas
