In a bowl take maida, salt, oil. Mix all together. Then add water accordingly to make a tight dough. Let it rest for 10 mins

In a pan roast coriander seed for 1 min on low flame. Then add cumin seeds, sesame seeds and fennel seeds. Roast well till aroma is released. Let it cool and then grind to a fine powder.

In that same pan heat 1 tbsp oil add hing and besan. Roast it well. Then add the prepared dry masala powder. Mix well. Then add salt and chilli powder. Mix well. Remove from flame. Let it cool. Add the castor sugar and mix well with hand. Add 2 tbsp water to it and prepare the filling

Now make small balls with the dough. Fill 1tsp of the prepared filling. Close properly. Just slightly roll with a rolling pin to give a small puri like shape. Make all mini kachoris.

Heat oil in a kadhai to deep fry the kachoris. Heat the oil and then lower the flame. Do not be in a hurry to fry them. Fry them on low flame so that it's cooked well from inside and then it will become crispy.
