For the potato masala, pressure cook 3 medium sized potatoes until soft. Mash them to a chunky form.

In a wide pan, heat coconut oil and temper mustard, urad dal, cumin and hing. The use of coconut oil enhances the flavor and taste manifold.

Once the seeds splutter, add green chilli, ginger and garlic and sauté till the raw smell goes.

Next toss in the chopped onion and cook till they turn translucent. Halfway add some fresh curry leaves. Once the onions are cooked well, add the turmeric powder and give a stir.

Now add a cup of water along with required salt and let it boil in medium flame.

Once the water comes to a boil, add the mashed potatoes and cook till it reaches a thick consistency.

After the masala is ready, prepare the dosa. Heat a dosa tawa, pour the batter, add some ghee and cook until the dosa turns golden brown.

Now spread the potato masala over the cooked dosa and serve with chutney or sambar. Additionally, idly-dosa podi may be sprinkled over the dosa and then masala be spread for extra flavor.
