Ingredients

  1. 1 lbandouille sausage, sliced 1/4in thick
  2. 6scallions
  3. 1large green pepper
  4. 2ribs celery, chopped
  5. 1 1/2 cupslong grain rice
  6. 1/2 tspdried thyme
  7. 1 lbraw shrimp, peeled and deveined
  8. Black pepper
  9. 1large or 2 medium cloves garlic
  10. 3 cupschicken broth

Cooking Instructions

    In a large heavy saucepan cook sausage until lightly browned, remove with slotted spoon and reserve

    Chop scallions reserving dark green part for garnish, add to sauce pan with green pepper, celery, and garlic, cook over moderate heat 5 minutes stirring often

  3. 3

    Add broth, rice, thyme, and reserves sausage, bring to boil then reduce to simmer and cover for 10min

  4. 4

    Stir in shrimp and pepper, cover and cook another 10mins until shrimp are just done and rice is tender
