Ingredients

4 servings
  • 1 lb.ground chicken
  • 1/2 cupbreadcrumbs
  • 1/4 cupfreshly grated parmesan cheese
  • 1large egg
  • 2 tsp.dried parsley
  • 1/2 tsp.each dried basil, salt, garlic powder, onion powder
  • 1/4 tsp.pepper
  • 2 tbsp.olive oil
  • 2 cupsmarinara sauce (homemade or storebought)
  • 1/2 cupshredded mozzarella cheese

Steps

    In a large bowl, mix together the ground chicken, breadcrumbs, egg, parmesan cheese and seasonings. Form the mixture into 4 evenly sized patties.

    Heat the olive oil in a large, deep skillet (one with a tight-fitting lid) over medium high heat. Once the oil is hot, add the patties to the skillet. Let them cook until golden on the bottoms, about 4-5 minutes. Then flip them. Lower the heat down to medium and add the marinara to the skillet all around the patties. Sprinkle 2 tbsp. of mozzarella over each patty, then place the lid on and let this cook until the chicken is completely cooked through, about 10-12 additional minutes.

    That's it! If serving on buns, then spoon some of the extra marinara over the bottom bun before placing the patty on it.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
