Ingredients

  • 1/2 tablespooncumin
  • 1/2 tablespoonoregano
  • 1/2 tablespoonblack pepper
  • 5avocado leaves
  • 5bay leaves
  • 1/4 teaspoonwhole cloves
  • 1 headgarlic
  • 2dried pasilla chiles
  • 1 barachiote paste
  • 1banana leaf
  • 4tomatoes
  • 1onion
  • 3 1/3 poundspork shoulder or pork loin (about 1.5 kilograms)

    Add the chiles, chopped tomatoes, chopped onion, avocado leaves, bay leaves, achiote paste cut into cubes, garlic, cloves, and all the seasonings to a blender. Add about 3 pinches of salt and 2 cups water (about 1/2 liter). Blend until smooth.

    Place the banana leaf in a large skillet or Dutch oven.

    Pour a little of the blended sauce over the banana leaf.

    Add a layer of pork, then more sauce, then more pork, alternating layers.

    Add a few slices of orange, cover with the banana leaves, and let marinate (preferably overnight).

    Cook over low heat for 1 1/2 to 2 hours, until the pork is very tender.
