Add the chiles, chopped tomatoes, chopped onion, avocado leaves, bay leaves, achiote paste cut into cubes, garlic, cloves, and all the seasonings to a blender. Add about 3 pinches of salt and 2 cups water (about 1/2 liter). Blend until smooth.

Place the banana leaf in a large skillet or Dutch oven.

Pour a little of the blended sauce over the banana leaf.

Add a layer of pork, then more sauce, then more pork, alternating layers.

Add a few slices of orange, cover with the banana leaves, and let marinate (preferably overnight).

Cook over low heat for 1 1/2 to 2 hours, until the pork is very tender.
