This is something I throw together when I want potatoes, but not one of my usual dishes. I leave the skins on for mine, but you could peel them if you want. The hubby loves these so much he dug into this batch before I could even get a pic. Lol

This is something I throw together when I want potatoes, but not one of my usual dishes. I leave the skins on for mine, but you could peel them if you want. The hubby loves these so much he dug into this batch before I could even get a pic. Lol

Preheat oven to 375°F. Spray a 8x8" square baking dish with cooking spray. Set aside.

Place prepared potatoes in a medium saucepan. Fill with enough water to just cover. Add some salt (about 1 tsp). Boil until just tender. About 10 minutes after boil starts.

While potatoes boil, wisk together everything else except the shredded cheese in a large bowl.

When potatoes are done drain and add them to the bowl. Stir gently to combine. Note: Some of the pieces will break up and that's ok. They act as a binder for the dish.

Spread out in baking dish cover with shredded cheese. Bake uncovered 15 minutes or until cheese is golden and bubbly. Enjoy!
