Crispy restaurant style sweet potato fries. Best served with a side of ranch dressing or ketchup!

Cut 1 large sweet potato into 1/4 inch strips.

Let the fries soak in a large bowl of cold water for at least 1 hour. This will draw the excess starch out of the sweet potatoes which helps them cook crispy on the outside, tender on the inside.

Preheat the oven to 425 degrees Fahrenheit.

Drain the water and pat the fries dry.

In a large bowl, mix the fries with 1 tablespoon each of paprika and corn starch. The fries should have an almost invisible coating.

Place the fries on a baking sheet coated with a thin layer of olive oil. Space the fries out so they can evenly crisp.

Spread olive oil then each seasoning on the fries.

Cook for 30 minutes, flipping half way through. Season fries with 1 tablespoon each of brown sugar and salt during the last 10 minutes of cooking.

Serve with ranch dressing or ketchup and enjoy!
