Nutritious Sweet Potato Parathas

Sweet potato is said to be more nutritious than the plain potato. Generally many fasting dishes are made using sweet potato. Generally many kids including mine are not willing to eat this healthy vegetable. Hence, I had introduced the sweet potato to them through a chaat recipe.

Once while discussing this with my friend, she gave me this recipe for parathas. I just added an extra ingredient like Ragi flour to make it more healthier and it was a heat with my family. This is a very easy and simple recipe and these parathas make for a very healthy and filling breakfast or dinner. These are a very good option for tiffins too!

Ingredients

6-7 min
4 servings
  • 2Large Sweet potatoes
  • 1 3/4 cupsWhole wheat flour
  • 1/4 cupRagi flour (naachni)
  • 2 tspGinger green chilli paste (to be adjusted)
  • 1/4 cupCoriander leaves …chopped
  • to TasteSalt
  • Oil and water for kneading the dough
  • Homemade ghee for roasting the parathas

Steps

  1. 1

    First thing that needs to be done for making the sweet potato parathas, is to steam the sweet potatoes in a pressure cooker or microwave.

  2. 2

    Peel and grate the sweet potatoes. Add to it the above mentioned ingredients and knead to a semi soft dough using water as required.

  3. 3

    Make small balls out of it and start rolling circular discs for the paratha. Heat a griddle and roast the paratha on it on medium heat.

  4. 4

    When the bottom side is slightly roasted, flip the paratha and increase the flame to high. Apply some homemade ghee on the top surface of the paratha.

  5. 5

    When the flipped side is well roasted, flip the paratha once again and cook till brown spots appear on the bottom side, applying slight pressure on the edges of the paratha.

  6. 6

    When done on both sides, transfer it to an airtight container and repeat the process till all the parathas are done.

  7. 7

    Serve the delicious and nutritious Sweet Potato Parathas with some tomato ketchup, green coriander chutney and fresh curds.
