Ingredients

  • 1butternut, peeled, de-seeded and cubed
  • 1sweet potato peeled and cubed
  • 2large carrots, peeled and cubed
  • 1onion or a leek sliced/chopped
  • Thumb sized piece of ginger finely chopped (add more if you like a bit of heat)
  • 1sprinkling of dried chilli flakes
  • 3-4 teaspoonscurry powder
  • 1 teaspooncumin seeds
  • Halflitre hot veg stock
  • Tincoconut milk
  • Salt and pepper to your taste

Steps

  1. 1

    Chop/cube all the veg and sweat until soft

  2. 2

    Add spices

  3. 3

    Add hot stock

  4. 4

    Simmer for about 20 minutes

  5. 5

    Take off the heat and add coconut milk

  6. 6

    Zizz until smooth

  7. 7

    Adjust thickness to your taste with extra liquid
