Indian Style Savory Potato Masala French Toast Rollups

Mash the boiled potatoes in a bowl and keep aside. Heat oil in a pan. Add chopped onions, ginger and green chilies. Saute for a few minutes till onions soften. Add turmeric powder, garam masala powder, & lemon juice and mix well. Add the mashed potatoes and with salt and mix well making sure there are no lumps. Remove from heat.

Add chopped cilantro leaves and mix well. Remove the crust from the bread slices. Roll the bread slices with a rolling-pin to flatten it. Spread 1 tbsp of potato filling on each bread slice and roll it up tightly. In a bowl, whisk together eggs, milk, salt, pepper and cilantro. Heat ghee in a large skillet over medium heat. Dip each bread roll in the egg batter and place on skillet. Shallow fry on each side for 2-3 minutes till golden brown. Serve hot with ketchup as a snack or for breakfast.
