Chicken and Pineapple

Did my shopping two days ago. Got a pineapple. Cut it today. It was sweet. Also bought a medium chicken. Cut into halves to be used for soup later. That was the plan. But as a wise man said: only fools never change their mind.

Did my shopping two days ago. Got a pineapple. Cut it today. It was sweet. Also bought a medium chicken. Cut into halves to be used for soup later. That was the plan. But as a wise man said: only fools never change their mind.
Cooking Instructions
- 1
Put enough water in the frying pan to boil chicken. When water is boiled, add 1TBS of salt. Put chicken in and cook for 2 minutes. Drain chicken. Discard the water.
- 2
Put pan back on high heat. Put some oil, add chicken, 1/2 TBS of salt, 1/2 TBS of sugar, ginger and garlic. Mix chicken and seasoning well. Pour in 2/3 cup of water. Cover lid and cook chicken for about 15 minutes.
- 3
Meanwhile, cut onion, bell peppers and pineapple into cubes.
- 4
When only about 3 TBS left from the 2/3 cup of water, make a well for soy sauce. Pour soy sauce in, wait till bubbling, mix well with all other ingredients.
- 5
Stir well. When the soy sauce is reduced to about 1/3, add the 2 TBS of sugar. Mix well. Turn off heat. Ready to be served.
- 6
The pineapple gives a special touch to the sweetness of the dish. They taste good by themselves too.

Chicken with pineapple sauce Chicken with pineapple sauce
I was partway through cooking this dish when my wife came up and said, 'oh, you're making chicken hamonado.' I was actually whipping something up off the top of my head so, of course, I had to look it up right away. Turns out chicken hamonado is a Filipino recipe for chicken in pineapple sauce. It was a little weird to get this revelation from my wife, who's the non-Filipino in the family. She explained that she knew the dish because the Filipino ladies from her church used to bring it to potlucks. My version deviates quite a bit from the theirs. In fact, it probably owes more to a certain British chef -- I Jamie Oliver'd the dish by adding chili and mint. Delicious. Robert Gonzal -
