1 tbspminced Onion
1 lbeggplant, unpeeled, (sliced - 1/2 in)
1/3 cupdry breadcrumbs (fine)
1/3 cupgrated parmesan cheese
1 tspitalian herbs

Pre-heat oven at 420 F, bake for 25 minutes (flipping eggplant in between.
