Turn the oven to 200C.

Then in a pan, add the butter and heat.

Next add the onion, sprinkle with a little salt and fry for 3-5 minutes or until the onion has softened. Once cooked let it cool.

Roll the ready made pastry slightly thinner to approximately half the size.

Using a pastry cutter, cut the pastry to size. (I used a Yorkshire pudding tray which fit the cut pastry perfectly.)

Spray the tray with oil before transferring the pastry into the trays. Then add the cut pastry.

Spoon into each tray about 1 tablespoon of the cooked red onions.

Add the goat's cheese on top and sprinkle with thyme.

Brush the edges with the egg. And transfer to the oven.

Cook for about 15-18 minutes.
