Ingredients

4 servings

1 TBLSvegetable oil
1 cupmedium or long grain rice
1/4 cupdiced onions
2 cupschicken broth
1 cantomato sauce (or diced)
1 TBLSgarlic powder
1 tspsalt
1/2 TBLScumin
Cilantro (optional)

Steps

1

Heat oil in large skillet and saute onions until translucent.

Add rice and cook until slightly brown.

Add tomatoes, broth and seasonings. Stir well.

Simmer for 45 minutes, trying NOT to stir too much.

Add cilantro in last 10 minutes if desired
