Ingredients

  1. For the dough:
  2. 5 handfulsgluten-free spelt flour (about 3 1/2 cups or 420 grams)
  3. 1 pinchsalt
  4. 1little olive oil
  5. Water, as needed, to make a soft, pliable dough
  6. For the filling:
  7. 20 tablespoonswhole grain tahini
  8. 20 tablespoonsbrown sugar
  9. Cinnamon
  10. Honey, for serving

    In a large bowl, combine the flour, salt, and olive oil. Start kneading and gradually add water until you have a soft, pliable dough. Divide the dough into 5 or 6 equal balls.

    Roll each ball into a thin sheet. Spread about 4 tablespoons of tahini evenly over each sheet, then sprinkle with 4 tablespoons of brown sugar and some cinnamon.

    Roll up each sheet into a log and cut each log into about 12 small pieces. Place the pieces on a baking sheet lined with parchment paper.

    Bake in a preheated oven at 350°F (180°C) for about 15 minutes, until the dough is golden but not overbaked. Serve warm with a drizzle of honey on top.
