Tahini Rolls
An easy, quick, and healthy sweet treat that even those with gluten intolerance can enjoy! I use gluten-free spelt flour.

In a large bowl, combine the flour, salt, and olive oil. Start kneading and gradually add water until you have a soft, pliable dough. Divide the dough into 5 or 6 equal balls.

Roll each ball into a thin sheet. Spread about 4 tablespoons of tahini evenly over each sheet, then sprinkle with 4 tablespoons of brown sugar and some cinnamon.

Roll up each sheet into a log and cut each log into about 12 small pieces. Place the pieces on a baking sheet lined with parchment paper.

Bake in a preheated oven at 350°F (180°C) for about 15 minutes, until the dough is golden but not overbaked. Serve warm with a drizzle of honey on top.
