Cheesecake No bake pie

This is a staple for every holiday in my family. It has been my whole life. Then again, is there ever really a BAD time for cherry cheese pie? This one turned out exceptionally well because I had to get creative with the crust. This is the piece I ate while I wrote the recipe. It was in the fridge firming up. My husband opens the fridge and the whole pie fell to the terra cotta tiles in my kitchen. You know, it didn’t come out of the dish. It stayed in place! Thankfully it landed on its bottom with only a flesh wound on one side of it 😂 I took a picture and am adding it to the end of the recipe. #mycookbook

Ingredients

  • 2-8 ozblocks of full fat cream cheese, room temp
  • 1/3 cupsugar
  • 1-14 ozcan sweetened condensed milk
  • 1/4 cuplemon juice
  • Splashvanilla
  • For the crust:
  • 20vanilla sandwich cookies
  • 1sleeve graham crackers
  • 1/3 cupmelted butter or margarine
  • 1/4 cupwhite sugar

Steps

  1. 1

    Make the crust first. Combine graham crackers and cookies in a food processor or gallon ziploc bag. Grind or beat them to a pulp. Add the sugar and butter and combine til it’s the consistency of wet sand. Put in a pie dish and press it into place. I use the bottom of a measuring cup sprayed with nonstick spray. At this point you can bake the crust at 350 for about 10 minutes but I don’t like mine baked.

    In a large bowl beat the cream cheese and sugar together first. This is insurance for no lumps. Add the sweetened condensed milk, lemon juice and vanilla. Poor into pie crust and smooth the top. Refrigerate for at least a couple of hours before cutting.

    Top with any fruit or pie filling or chocolate or whatever you like on yours and enjoy!

    Here’s the damaged pie but not a single crumb got wasted 🙃

I'm an army brat with a Cajun mother and an Irish dad. I'm married to the love of my life, David, and we have 2 daughters and 2 grandchildren. I've been a barber for 40 years. Im an old fashioned, old school cook and my recipes are basic. I change them up all the time.Since finding out I’m diabetic I’ve had to rearrange old habits. Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
