Ripe Plantain and Ground Beef Baskets

Boil the ripe plantains in water until they are soft. Once soft, remove them and mash to form a dough.

Cook the ground beef with your choice of seasonings. I used salt, beef bouillon, seasoning mix, and basil, but you can add whatever you like.

Shape the plantain dough into small baskets (you can use a canned drink to help form them), fill each with ground beef, and top with shredded cheese. Place them all in a greased baking dish.

Bake for 30 minutes, watching to make sure the plantain doesn't burn. Serve and enjoy.
