These are easy to make and cook in just a minute! They're the perfect answer for anyone who wants to impress without a lot of hassle. You can make them ahead of time—just freeze the gnocchi separately on a tray, then transfer them to a freezer bag. When you're ready, cook them in boiling water straight from the freezer.

    Tips:
✔️ Work with the potatoes while they're very hot—the heat helps the starch form a gel that gives the dough structure.
✔️ Boil the potatoes with the skins on to prevent them from absorbing too much water.
✔️ The best potatoes are white potatoes because they're starchy.

  15. 15

    Mistakes to avoid:
❌ Don't use a food mill or blender to mash the potatoes—they'll turn gluey.
❌ Don't add flour to cold potatoes.
    ❌ Don't use new potatoes.
