Gather all the ingredients.

Wash the potatoes well and place them in a pot with cold water and a pinch of salt. Bring to a boil, then reduce the heat.

When the potatoes are tender (check with a toothpick), drain and peel them while still hot.

Mash the potatoes with a potato ricer onto a work surface.

Add the flour and knead quickly.

Knead until you have a smooth, even dough.

Roll the dough into ropes about 3/4 inch (2 cm) thick.

Lightly flour and cut into pieces about 1/2 inch (1 cm) long.

Roll each piece over a gnocchi board, fork, or grater to shape.

Place the gnocchi gently on a tray dusted with a little flour.

Cook the gnocchi in salted boiling water and remove them with a slotted spoon as soon as they float to the surface.

Toss with your favorite sauce, or simply melt a generous pat of butter with fresh sage leaves in a skillet and add the gnocchi.

Tips:
✔️ Work with the potatoes while they're very hot—the heat helps the starch form a gel that gives the dough structure.
✔️ Boil the potatoes with the skins on to prevent them from absorbing too much water.

❌ Don't use a food mill or blender to mash the potatoes—they'll turn gluey.
