Start by washing, peeling and cutting the plantains and onion and pour into a blender.

My tip to making the blending process easier without stress is to chop the plantains and onion into very tiny bits. That way the blades of the blender work their magic faster.

In the same blender add the melted butter, eggs, scotch bonnet and milk. Blitz on a low speed until you get a smooth consistence.

In a different bowl, mix the flour, salt and sugar before use.

Pour the plantain mix into a separate bowl then gradually work in the mixed flour. At this step when noticed its too thick loosen up a little with remaining milk but if no milk don't worry use little water to do it.

Add the nicely chopped bell peppers into the plantain and mix all together.

Place the frying pan on a very low heat, add a tbsp of vegetable oil and pour the plantain mix. Below are the spoons I use in measuring my plantain mix.

Keep a very close eyes on it, fry to be golden brown and toss to the other side and do the same. Then take off heat

Garnish with ketchup and bell peppers just like mine or any side drink of your choice
