
Mexican Toasted Sandwiches

A couple of years ago, my birthday fell on national toasted sandwich day. I decided that I was going to have some form of toasted sandwich for each meal of the day to celebrate. I also bought a sandwich toaster as a birthday treat.
The quantities aren't listed here because I guess everyone knows how to make a sandwich, it's fun to make a few rounds and adjust the ratios.
For fat, I use the oil left over from cooking the chorizo but if I didn't have that I'd use butter.
I forgot to take any photos but I'll add one the next time I make these.

Slice the chorizo and fry on a high heat until lightly coloured. It really doesn't mater if some of it is black but it really doesn't need much frying to get it ready for the sandwiches.

Set the chorizo out on some kitchen roll to soak up the excess oil.

Grate the cheese.

Use the fat to either spread one side of the bread you'll be using or to grease the sandwich toaster. You could use the oil left from frying the chorizo.

Assemble the sandwiches by spreading refried beans on the non oiled side of the bread, add a good handful of cheese, and layer on some slices of chorizo. Add some Tabasco sauce to taste and then cook in the sandwich toaster for the recommended time or until the bread is golden and the cheese is bubbling.
