Cut the lemon into 1cm wide disks and remove most of the flesh. Then place in a glass jar with the lemon juice that was produced, and cover with water. Leave in the fridge with the lid on for at least a week.

The rind should now be relatively soft. Remove from the jar and cut into small chunks. Add these to another clean jar.

Add the capers, lemon juice and olive oil. Mix well and return to the fridge for a few days. Use 1 tsp of capers and lemon juice for each tbsp of lemon chunks and olive oil.

Use as a side for salad or fish.
