Ingredients

4-6 servings
  • 1 lbground Turkey (93% lean)
  • 1 (4 oz)can diced green chiles (not drained)
  • 1/2 cupTrader Joe's Cowboy Caviar
  • 2 Tbspolive oil
  • 1 Tbsplime juice (Key West or other brand)
  • 1 1/2 Tbspchili powder
  • 2 tspground cumin
  • 1 1/2 tspbrown sugar (I used dark)
  • 1 tspground paprika
  • 1 tspsalt
  • 1/2 tspgarlic powder
  • 1/2 tsponion powder
  • 1/2 tspdried oregano
  • 1/4 tspcayenne pepper
  • 2avocados sliced
  • 4whole wheat tortillas (or preference)

Steps

  1. 1

    Combine all spices and sugar in a small bowl.

  2. 2

    Set instant pot on saute feature for 3-4 minutes. Let instant pot warm up then add olive oil and turkey. Stir occasionally until turkey has lightly browned.

  3. 3

    Add bowl of seasonings, lime juice, green chiles, and Cowboy Caviar. Stir until well combined.

  4. 4

    Set instant pot on pressure cooker feature for 8 minutes on high.

  5. 5

    Prepare avocados while turkey is cooking.

  6. 6

    Warm tortillas (microwave or oven), add turkey taco meat, top with avocado and enjoy!
