Preheat the oven to 200c and par boil the potatoes (15-20minutes) until tender

Gently smash the potatoes with a folk or masher until flattened but still in one piece. Season and top with oil, garlic and thyme. Roast in the oven for 20-30 minutes until golden and crisp
