My Mom absolutely love Cauliflower Cheese and makes a delicious one from scratch but one day all we had in the fridge were a bit of cauli and a couple of cheese slices and this was born.

Boil the Cauliflower until just soft.

Put half the Cauliflower in a small oven proof dish, grind a little salt and pepper over and top with the first slice of cheese the repeat.

Pop in a preheated oven at gas 7/220c for 20 minutes or until cheese is golden and bubbling.

Serve with the roast dinner of your choice.
