Ingredients

  1. 10 goil (for high heat)
  2. 170 gcarrot
  3. 135 gonion
  4. 100 gsunflower seeds
  5. 100 gnuts (cashew, almonds...)
  6. 800 gcan tomatoes (polpa)
  7. 100 gcaned corn
  8. 500 gcooked beans
  9. 100 gcooked quinoa
  10. 2small chilli peppers
  11. 200-400 mlwater
  12. 1 tbspcumin
  13. 1 tbspground coriander
  14. 1small cinamon stick
  15. 30 gdark chocolate
  16. Salt and pepper
  17. Lime

Steps

  1. 1

    Add oil to the pan and roast onion and carrot on it. After add cashew and sunflower seeds and roast it to golden brown. Thenn add spices and let it to smell nicely.

    Add little bit of water and then add caned tomatoes. And let it stir.

  3. 3

    After add guinoa, beans and corn. In the end add dark chocolate, salt and pepper and lime juice.

  4. 4

    Serve it with vegan "sour cream", avocado or even with fresh coriander on top. Enojy!
