Very delicious and easy to prepare it’s a must try recipe.
Steps

Soak saffron in approx. 1/2 cup water.Finely chop all the vegetables.

Heat a heavy bottomed pan or kadhai.Add 8 cups water to it.To it add the whole spices,1 tbsp salt and 1 tbsp ghee.When it comes to boil add the soaked rice.Cover the lid and cook till rice is 70-80% cooked.Strain the rice and keep aside.

Deep fry two onions.Keep aside.Heat a heavy bottomed pan and add 1 tbsp ghee to it.Add cumin seeds,1 bay leaf and 1 black cardamom.Now add chopped onion and fry for about 2-3 minutes.Add coriander powder,turmeric powder and chilli powder to it.

Now add all the chopped vegetables and green chillies to it.Add salt.Fry for 5 minutes on medium flame.Beat curd using a beater and add to the vegetables.Mix properly.

Cover the lid and let the vegetables cook for5-7 minutes.

Now we will layer the biryani in the pan.For layering first at the bottom of the pan add cooked vegetables.Add some rice.On it spread mint leaves,saffron water and fried onion.Again add 2nd layer of cooked vegetables then over it rice and then on the top again spread mint leaves,saffron water and fried onion.Then spread 1 tbsp ghee on the top.Cover the lid and let it cook for about 10-15 minutes.Delicious vegetable biryani is ready to serve.Enjoy with raita.
