Chal Potol (Rice with pointed gourd)

#indiankitchen Chal Potol is a Bengali delicacy. I think many of you have heard about "Muri Ghonto". Chal Potol is basically the vegetarian version of "muri ghonto". It is basically the Pulao kind of preparation having fried pointed gourd in it.

Steps

Heat some oil in a wok. Add the pointed gourd and 1/4 teaspoon of turmeric powder and some salt as per the pointed gourd. Deep fry them and keep them aside.

Heat some more oil in a wok if required, and add the cloves, green cardamom, cinnamon stick, cumin seeds, dry red chilli and bay leaf.

Let them splutter.

Add the chopped tomatoes and fry them well.

Add the rest of the turmeric powder, ginger paste, cumin powder, coriander powder, red chilli powder and fry the masala altogether.

Wash the rice and keep it aside so that it becomes dry.

Add the rice and slitted green chillies in it and fry it well.

Add 2 cups of water and some salt and sugar as per the rice.

Cover it with a lid. Wait until the rice are half cooked.

Add the fried pointed gourds. Mix them well and again keep it covered.

Wait till the moisture dissapears. Check whether the rice and the pointed gourds are cooked well.

Add the garam masala powder and ghee.

Mix them well and serve hot.
