Paneer Bhurji (Scrambled Cottage Cheese With Aromat Spices)

Paneer Bhurji is a type of scrambled, or say crumbled cottage cheese stir fry in an onion tomato mixture with some aromat spices. Throughout India, one can find umpteen varieties of paneer dishes. Paneer which mostly originated from the North of India is now a national favourite! It is now included in almost each cuisine in their own unique ways!

Paneer is a high protein food and highly nutritious. Protein gives us energy for the daily tasks and even keeps us full longer with a feeling of sateity! This is a good option for vegetarians to fulfill their daily protein needs. As paneer is made made from full fat milk, as well as skim milk, it is should be chosen as per one's health requirements.

Those who either do not like paneer much or are unable to consume it due to any particular health issue, can substitute Tofu in this recipe!Nowadays, thankfully some good quality, soft tofu is available in some supermarkets in India too! In this recipe, I have added Kitchen King Masala as it gives a unique delicious flavour to this dish. If unavailable, you can use only garam masala too!

Ingredients

30 min
4 servings
  • 350 gmPaneer (Cottage Cheese)
  • 4 cups (4 Onions approx)Chopped Onions
  • 1 cup (2 Tomatoes approx)Chopped Tomatoes
  • 3/4Chopped Capsicum (Shimla Mirchi / Dhobli Mirchi)
  • 1 tspGinger garlic paste
  • 1/2 tspTurmeric powder
  • 1 tspBedgi Red Chilli Powder
  • 1/2 tspKashmiri Red Chilli Powder
  • 2 tspKitchen King Masala
  • 2 tspGaram Masala
  • To TasteSalt
  • as requiredChopped Coriander Leaves for garnishing
  • For The Tempering :
  • 4 tbsOil
  • 2 tspHomemade Ghee (Clarified Butter)…. Optional
  • 2 tspCumin Seeds
  • 2Minced Green Chillies (to be adjusted as per preferrence)

Steps

    To make Paneer Bhurji, chop the onions, tomatoes and capsicum and set aside.

  2. 2

    Heat a pan and add oil to it. When it heats up, add the cumin seeds and the minced green chillies.

  3. 3

    Add the chopped onions and saute till translucent. Add to it the ginger garlic paste and mix well. Saute for a while.

  4. 4

    Add the turmeric powder and mix. After a while add the chopped capsicum and saute for a while. Cover and cook for a few minutes.

  5. 5

    Uncover and add the chopped tomatoes. Mix well and again cover and cook till all the ingredients are well cooked.

  6. 6

    Add the red chilli powders, garam masala powder, kitchen king masala powder and salt to taste.

  7. 7

    Saute for a few minutes. Now crumble the paneer with your fingers and add it to the kadhai.

  8. 8

    Mix well and cook for a few minutes, but not too long as the paneer may then stiffen.

  9. 9

    Switch off the flame and garnish it with chopped coriander leaves.

  10. 10

    Serve the delicious Paneer Bhurji with whole wheat rotis for a delicious high protein and nutritious breakfast!

    If desired use this Paneer Bhurji to make sandwiches or healthy wraps for tiffins too!
