Shrimp Ceviche with Mango and Tequila

I found this recipe online one day and made a few changes to the ingredients. I really liked it! I made it at my culinary school for an exam and it turned out great. Now I’m sharing it with you—hope you enjoy it and try making it at home.

Steps
- 1
Clean the shrimp. Boil in salted water for about 2 minutes. Drain and rinse with ice water. Drain very well.
- 2
Make a vinaigrette by mixing the lime juice, olive oil, tequila, salt, and pepper. Sprinkle the onion with salt to mellow it, rinse, then combine all the ingredients. Adjust salt and pepper to taste.
- 3
Serve with corn tortilla chips. (You can serve the spicy pepper on the side.)
