Ingredients

6 servings
  1. 4-6chicken breasts
  2. 2-3 tablespoonsolive oil
  3. 1Green bell pepper
  4. 1Onion
  5. 7-8 clovesgarlic minced
  6. 1/3 cupbitter orange
  7. 1/2 cupdry cooking wine
  8. 1 cupstuffed manzanilla olives
  9. 4potatoes cut in fours
  10. 2 tablespoonscumin powder
  11. 2 tablespoonscomplete seasoning
  12. 1 packetsazon goya with azafran
  13. 1small can tomato sauce
  14. Fill same can with water
  15. 1Bay leaf

Steps

45 mins
  1. 1

    Rinse chicken and pat dry then cut into chunks.

  2. 2

    Season chicken in bowl with cumin, complete seasoning and sazon

  3. 3

    Chop onion, green pepper and garlic and sautee in olive oil

  4. 4

    Cook until onion is translucent

  5. 5

    Add chicken and toss around until white

  6. 6

    Add potatoes and toss around.

  7. 7

    Add remaining ingredients

  8. 8

    Stir well and make sure sauce covers chicken and potatoes

  9. 9

    Place bay leaf on top and cook at medium to low for about 45 minutes without uncovering.

  10. 10

    Serve over white rice
