If you have leftover chickpeas, this is a great way to use them—not just during fasting periods. You can also simply soak chickpeas overnight in plenty of water and then cook them. They turn out crispy and delicious.

If you have leftover chickpeas, this is a great way to use them—not just during fasting periods. You can also simply soak chickpeas overnight in plenty of water and then cook them. They turn out crispy and delicious.

Finely chop the onion, green onions, and leek. Sauté them in a little olive oil until just softened. Let cool.

In a bowl, mash the cooked, well-drained chickpeas with a fork. Add the sautéed vegetables, chopped herbs, baking powder, semolina, and spices.

Cover and chill the mixture in the refrigerator for a bit to firm up. Then shape into fritters. To help the coating stick, lightly wet your hands with a little water, then roll the fritters in breadcrumbs or semolina.

Place them on a baking sheet and bake at 350°F (180°C) until golden, drizzling with a little olive oil. Alternatively, you can fry them in hot oil over low heat at first. Enjoy!
