Ingredients

  1. About 2 1/2 cups cooked, drained chickpeas (about 400 grams)
  2. 1yellow onion
  3. 2-3green onions
  4. 1large leek (white part only)
  5. About 1 tablespoon fresh dill, mint, parsley, or to taste
  6. 1little olive oil
  7. About 1/4 teaspoon ground cumin (or 1/2 teaspoon for a stronger flavor)
  8. About 1/2 teaspoon ground turmeric
  9. 1 teaspoonbaking powder
  10. About 3 tablespoons flour (I usually use cornmeal) or fine semolina (I used semolina)
  11. 1 pinchsalt (chickpeas are already salted), pepper
  12. Breadcrumbs, crushed crackers, or coarse semolina for coating

Steps

    Finely chop the onion, green onions, and leek. Sauté them in a little olive oil until just softened. Let cool.

    In a bowl, mash the cooked, well-drained chickpeas with a fork. Add the sautéed vegetables, chopped herbs, baking powder, semolina, and spices.

    Cover and chill the mixture in the refrigerator for a bit to firm up. Then shape into fritters. To help the coating stick, lightly wet your hands with a little water, then roll the fritters in breadcrumbs or semolina.

    Place them on a baking sheet and bake at 350°F (180°C) until golden, drizzling with a little olive oil. Alternatively, you can fry them in hot oil over low heat at first. Enjoy!
