My husband always likes something sweet and chocolate involved, as a given. This was a quick throw together with a cake mix but dummy me found out 10 minutes after the fact that I forgot to add the eggs. I had figured out some time ago that that adding about a cup of sour cream to any cake did amazing things to the texture. This whoopsy moment turned out sooo good. No eggs in this.

Ingredients

  1. 1 box+ 1/2 of another box white cake mix
  2. 2/3 cupoil
  3. 1 cupsour cream
  4. 1 cupmilk
  5. Frosting:
  6. 1/2 cupbutter or margarine
  7. 1/3 cupcocoa powder
  8. 3 cupspowdered sugar
  9. 1/3 cupmilk

Cooking Instructions

  1. 1

    Set oven to 350. Mix all cake Ingredients well then pour into well greased cake pan. I used a bundt pan. Bake about 25-30 mins.

    To make the frosting, soften butter and mix with cocoa powder. Add powdered sugar and milk and mix well. Use to frost completely cooled cake.

I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
