Ingredients

  1. For the cream:
  2. 500 mlmilk
  3. 1 literdouble cream
  4. 300 gramssugar
  5. 30 gramsgelatine
  6. 100 mlcold water
  7. 5egg yolks
  8. 25 gramscorn starch
  9. 2 canstropical fruit or 800 grams of caned fruit
  10. For the jelly:
  11. 2 canstropical fruit or 800 grams of caned fruit
  12. 250 mlsyrup from the caned fruit
  13. 20 gramsgelatine
  14. 80 mlcold water
  15. 100 gramssugar
  16. For the base:
  17. 500 gramslady fingers
  18. 1.5 literswater
  19. 800 gramssugar
  20. For decoration:
  21. 300 mldouble cream
  22. 100 gramspowders sugar
  23. 400 gramsstrawberrys
  24. 100 gramsrasberrys

    Rehydrate the gelatine with the cold water.

    Mix it well. Wait 10 minutes.

    Put the egg yolks in a sauce pan.

    Add the sugar.

    Add the corn starch.

    Mix evrithing together.

    Add half of the milk and mix.

    Add the rest of the milk and mix well.

    Put the pan on medium heat and stir until it thickens.

    When the cream is thick take it off the heat and and add the gelatine.

    After fully melting the gelatine put plastic wrap on the surface of the cream, let it cool at room temperature.

    Meanwhile add the sugar to the hot water, let it cool down.

    Dip the lady fingers in the syrup and cover the hole area of the pan. The pan I used is 25 cm by 35 cm.

    When the cream is cooled whip the double cream until stiff.

    After that fold the whipped cream in the egg cream.

    Put half of the cream in the pan.

    Then add the two cans of fruit.

    And the last half of the cream.

    Now rehydrate the gelatine with the cold water. And wait 10 minutes.

    Heat the syrup from the fruit for the jelly until almost boiling.

    Add the gelatine and sugar and stir until dissolved.

    Add the fruit and gelatine syrup in a large jug.

    Blend until smooth. Then add in the pan.

    Let it chill for at least 5 hours.

    Whip the cream with the sugar until stiff and add on cake.

    Wash the fruit and decorate.

    Finish with a ribbon and a bow.
